3 MEAL PREP SALADS FOR A QUICK, HEALTHY LUNCH

Hey Friends! Welcome back to the blog! We all are busy and it can be hard to make healthy choices throughout the week. To help you those choices easy for the whole family, I’m sharing with you how to make 3 salads to meal prep for a quick, grab-n-go healthy lunch!

Easy Lemon Salad Dressing

Ingredients
  

  • 3 tablespoons Limoneira lemon juice
  • 1/2 cup olive oil
  • 2 tablespoons tahini
  • 1/4 teaspoon sea salt

Instructions
 

  • Add all ingredients to a small jar and whisk together until smooth.

Quinoa Chickpea Salad

Ingredients
  

  • 2 cups baby arugula
  • 2 tablespoons pine nuts
  • 1 cup cooked quinoa
  • 1 cup cooked chickpeas

Instructions
 

  • In a 32oz mason jar (or storage container of choice) add 3 tablespoons of dressing to the bottom of the jar.
  • Next, layer ingredients by chickpeas, quinoa, arugula, and pine nuts.
  • Top with a lid and store in the fridge for up to 3 days.

Fiesta Salad

Ingredients
  

  • 2 cups kale
  • 1 cup black beans
  • 1/4 cup corn
  • 1/4 cup diced carrots
  • 2 tablespoons sliced olives

Instructions
 

  • Using a 32oz mason jar (or storage container of choice), add 3 tablespoons of dressing at the bottom of the jar.
  • Next, layer salad with black beans, carrots, corn, olives, and kale.
  • Top with a lid and store in the fridge for up to 3 days.

Sesame Cashew Salad

Ingredients
  

  • 2 cups shredded cabbage
  • 1/4 cup diced carrots
  • 2 tablespoons sesame seeds
  • 1 sliced green onion
  • 1/2 cup cashews

Instructions
 

  • Using a 32oz mason jar (or storage container of choice), add 3 tablespoons of dressing at the bottom of the jar.
  • Next, layer salad with carrots, cashews, green onion, cabbage, and sesame seeds.
  • Top with a lid and store in the fridge for up to 3 days.
