Orange Herb Fish Bake

This one-dish fish bake is easy and loaded with both flavor and nutritional goodness. Cod is a low-fat source of protein with a mild taste. Our combination of Limoneira® orange, butter and herbs creates a luscious aroma along with a meal that’s sure to become a favorite. Serve it with rice or quinoa.

Ingredients
  

  • 4 cod fillets
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons butter
  • 3 shallots chopped
  • 3 garlic cloves minced
  • 2 Limoneira® oranges zest & juice
  • 1/4 cup white wine optional
  • 1/2 tablespoon fresh rosemary minced
  • 1/2 tablespoon fresh thyme minced
  • 1/4 cup flat leaf parsley chopped

Instructions
 

  • Preheat the oven to 375°F and lightly grease a large baking dish.
  • Arrange the cod fillets in the baking dish, and sprinkle with salt and pepper.
  • In a skillet, heat 1 tablespoon of butter, and sauté the shallots and garlic for 3 to 5 minutes, or until the shallots begin to soften.
  • Add the orange zest, and continue to cook and stir for another minute or two.
  • Add the remaining butter, orange juice, white wine if you are using it, rosemary and thyme.
  • Stir the ingredients together for 2 or 3 minutes to blend the flavors.
  • Pour on top of the fish.
  • Bake for 15 to 20 minutes, depending on the thickness of the fillets. The fish should be completely opaque.
  • Add the chopped parsley just before serving.
  • Serve with the sauce spooned over the fish.

Notes

Note: The fillets should be approximately 4 to 6 ounces each.
