Wash and chop cauliflower into florets
Peel and chop carrots
In a large soup pot, add cauliflower, carrots, seasonings and stock
Bring soup to a boil, add the lid and let simmer for 20-30 minutes or until vegetables are soft
Turn off the heat and use an immersion blender to blend the soup until it is smooth and creamy
Lastly, add the juice from the whole lemon and coconut milk and whisk until incorporated
