Lemon Hummus Roll Ups with Veggies & Fruit

  • 1 can chickpeas drained & rinsed
  • 1/4 cup tahini
  • 2 Limoneira lemons
  • 3 tablespoons olive oil
  • 2 garlic cloves
  • Pinch of sea salt
  • Tortilla
  • Cucumber sliced
  • Carrots
  • Snap peas
  • Raspberries


  • Add chickpeas, tahini, juice from lemons, olive oil, sea salt and garlic cloves to a food processor. Blend until smooth.
  • Spread some hummus over tortilla slice and add sliced cucumber. Roll up tortilla and cut into cubes.
  • Add to lunchbox with carrots, snap peas and raspberries.
