Orange Cinnamon Sweet Potato Muffins

  • ¾ cup Limoneira® navel orange juice
  • ½ cup sweet potato puree
  • 2 eggs or vegan egg replacer
  • 1 cup baking flour of choice
  • ½ cup blanched almond flour
  • ½ cup sweetener of choice
  • 1 teaspoon baking powder
  • 1 ½ teaspoon cinnamon


  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl, add eggs, sweet potato puree and orange juice. Whisk to combine.
  • Add sweetener, almond flour, baking powder and cinnamon. Mix to combine.
  • Add in baking flour and stir to combine.
  • Scoop mixture into lined muffin tin. Bake for 30 minutes.
  • Allow muffins to cool, top with zest and enjoy!
