Creamy risotto – it’s a side dish that rivals the main course, or a main course on its own. It’s also a leftover lunch that will be the envy of the office. This version lights up with the flavor of lemons, with peas and goat cheese to add taste and texture.
Note 1: Arborio rice is the preferred variety for risotto, since it will soak in all the broth while cooking and still hold its shape. Note 2: You can substitute ricotta for the goat’s cheese in a pinch. The taste will be milder, so you can add a bit more thyme if you like.
