Fish with Orange & Cinnamon Sauce

You can choose any white fish for this delicious recipe, with a preference for fish with thicker fillets, including cod, sea bass, red snapper or halibut. Infused with Limoneira® orange and spice, it becomes a tasty sensation. Best of all, it’s not difficult to make.

Ingredients
  

Fish

  • 2 pounds fish fillets
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • 1 Limoneira® orange zest & juice

Sauce

  • 2 tablespoons butter
  • 1 garlic clove minced
  • 1/2 tablespoon cinnamon
  • 1 Limoneira® orange zest & juice
  • 1/4 teaspoon red chilli pepper flakes
  • Salt to taste
  • Pepper to taste

Instructions
 

Fish

  • Preheat the oven to 400°F, and lightly oil a baking dish.
  • Sprinkle the fish fillets lightly with salt and pepper and place in the dish in a single layer.
  • Melt 1 tablespoon of butter in a small saucepan, and saute the garlic until fragrant, or about 2 to 3 minutes.
  • Stir in the orange juice, and drizzle over the fish.
  • Sprinkle with orange zest, and bake in the oven for about 10 to 15 minutes, depending on the thickness of the fillets. They should flake easily with a fork.

Sauce

  • Melt the 2 tablespoons of butter in a small suacepan and saute the garlic for 3 minutes or so.
  • Stir in the orange juice and zest, cinnamon and chilli pepper flakes, stirring over a medium-low heat for a minute or two.
  • Season with salt and pepper to taste.
  • When the fish is done, divide between four plates and drizzle with the orange cinnamon sauce.
