Fish with Orange & Cinnamon Sauce
You can choose any white fish for this delicious recipe, with a preference for fish with thicker fillets, including cod, sea bass, red snapper or halibut. Infused with Limoneira® orange and spice, it becomes a tasty sensation. Best of all, it’s not difficult to make.
Fish
- 2 pounds fish fillets
- Salt to taste
- Pepper to taste
- 1 tablespoon butter
- 3 cloves garlic minced
- 1 Limoneira® orange zest & juice
Sauce
- 2 tablespoons butter
- 1 garlic clove minced
- 1/2 tablespoon cinnamon
- 1 Limoneira® orange zest & juice
- 1/4 teaspoon red chilli pepper flakes
- Salt to taste
- Pepper to taste
Fish
Preheat the oven to 400°F, and lightly oil a baking dish.
Sprinkle the fish fillets lightly with salt and pepper and place in the dish in a single layer.
Melt 1 tablespoon of butter in a small saucepan, and saute the garlic until fragrant, or about 2 to 3 minutes.
Stir in the orange juice, and drizzle over the fish.
Sprinkle with orange zest, and bake in the oven for about 10 to 15 minutes, depending on the thickness of the fillets. They should flake easily with a fork.
Sauce
Melt the 2 tablespoons of butter in a small suacepan and saute the garlic for 3 minutes or so.
Stir in the orange juice and zest, cinnamon and chilli pepper flakes, stirring over a medium-low heat for a minute or two.
Season with salt and pepper to taste.
When the fish is done, divide between four plates and drizzle with the orange cinnamon sauce.
