Lemon & Orange Mousse

Two citrus flavors combine in this version of the classic dessert, mousse. The first step lies in making a thick curd from the fruit juices, then blending it with whipped cream for a rich treat. It’s not for every day, but when you do want to impress, or mark a very special occasion, this dessert will do the trick.

Ingredients
  

  • 1/2 cup Limoneira® orange juice
  • 1/3 cup Limoneira® lemon juice
  • 1 teaspoon Limoneira® lemon zest
  • 1 teaspoon Limoneira® orange zest
  • Salt a pinch
  • 1 cup granulated sugar
  • 6 eggs 3 separated
  • 1 cup heavy whipping cream

Instructions
 

  • Create a double boiler by filling a large saucepan about a third full of water, and bringing it to a simmer.
  • You'll use either a heat-proof bowl or smaller saucepan to fit inside.
  • In the bowl, beat the 3 whole eggs, and 3 egg yolks. Set aside the 3 egg whites for now.
  • Add the sugar, fruit juice and zest, and pinch of salt. Blend well, and place over the simmering water.
  • Cook for about 15 minutes over the water, stirring continuously. The mixture should thicken slightly.
  • Remove from the heat, and allow it to cool for 10 or 15 minutes. Transfer to a bowl, and cover with plastic wrap that touches the whole surface of the mixture.
  • Refrigerate for at least 2 hours.
  • When it's ready, beat the remaining 3 egg whites in a mixing bowl until stiff peaks form. Gently fold them into the citrus curd mixture.
  • Whip the whipping cream until stiff peaks form. Fold into the mousse.
  • Transfer to a serving bowl (or individual bowls) and chill for at least 30 minutes before serving.
