Meyer Lemon & Orange Kissed Ricotta Bruschetta Appetizers

These crispy bruschetta appetizers are full of luscious flavor. They combine Meyer lemon and seasonings in creamy ricotta, with a drizzle of orange and honey on top. You’ll want to keep a second batch ready to pop in the oven when you and your guests have gobbled up the first.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 baguette or Italian loaf
  • 1 1/2 cup ricotta
  • 1 Meyer lemon zest & juice
  • 3 cloves garlic minced
  • 1/2 inch ginger minced
  • Salt to taste
  • Black pepper to taste

Topping

  • 1 orange juiced
  • 2 tablespoons honey
  • 2 tablespoons dried chives
  • 2 tablespoons sesame seeds

Garnish

  • 1/2 cup pickled ginger thinly sliced

Instructions
 

  • Preheat the oven to 250 °F.
  • Cut the baguette or Italian loaf into slices about 1/2-inch thick.
  • Line a baking sheet with parchment paper, and place the slices on top in a single layer.
  • Brush with olive oil, and pop in the oven for 3 to 5 minutes – just until crisp, but not browned.
  • Remove from the oven and set aside for now.
  • Add the ricotta, Meyer lemon juice and zest, garlic and ginger to a small bowl and blend together with a fork.
  • Season with salt and pepper to taste.
  • Divide evenly among the bread slices, and smooth over.
  • Place back in the oven for another 5 to 10 minutes, as you make the topping.

Topping

  • In a small saucepan, add the orange juice (only) and honey.
  • Heat at a medium temperature until blended and slightly thickened, or about 5 to 10 minutes, as you stir frequently.

Assemble

  • When the bruschetta is nicely toasted, and the ricotta softened, remove from the oven.
  • Add a spoonful of the orange honey mix on top, and sprinkle with sesame seeds and chive.
  • Add a spoonful of pickled ginger on the side if you wish – the spicy edge makes a nice contrast.
