Grilled Pineapple with Citrus & Spice

Grilled pineapple is a barbecue delight that’s easy to make. The secret lies in a quick and efficient technique, and of course, the ingredients you use to flavor it. Our citrusy version includes a kiss of spice for a superlative treat from the grill – terrific for dessert, or to complement a spicy protein dish.

Ingredients
  

  • 1 pineapple
  • 2 tablespoons brown sugar
  • 1 lemon zest & juice
  • 1 orange zest & juice
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 2 tablespoons butter
  • 2 tablespoons maple syrup

Instructions
 

  • Peel and core the pineapple, and cut into rings about 1-inch thick.
  • Arrange the slices in a large baking dish with a lip.
  • In a small bowl, blend the cinnamon, ginger, brown sugar and the zest from the orange and lemon.
  • Sprinkle over the pineapple slices, and rub it into the pineapple slices on both sides.
  • In another bowl, add the lemon and orange juice, and maple syrup. Beat to blend together, and pour about two-thirds over the pineapple slices.
  • Cover with plastic wrap, and let them absorb the flavors for 20 to 30 minutes.
  • When they’re ready, discard the marinade, and brush the grill with oil and bring to a medium flame.
  • Melt the butter, and mix with the remaining juice and maple syrup mix.
  • Grill the slices for about 7 to 10 minutes, turning at least once, and brushing with the butter mix.
  • They’re done when they begin to turn a golden brown.
  • Serve immediately.
