Peel and core the pineapple, and cut into rings about 1-inch thick.
Arrange the slices in a large baking dish with a lip.
In a small bowl, blend the cinnamon, ginger, brown sugar and the zest from the orange and lemon.
Sprinkle over the pineapple slices, and rub it into the pineapple slices on both sides.
In another bowl, add the lemon and orange juice, and maple syrup. Beat to blend together, and pour about two-thirds over the pineapple slices.
Cover with plastic wrap, and let them absorb the flavors for 20 to 30 minutes.
When they’re ready, discard the marinade, and brush the grill with oil and bring to a medium flame.
Melt the butter, and mix with the remaining juice and maple syrup mix.
Grill the slices for about 7 to 10 minutes, turning at least once, and brushing with the butter mix.
They’re done when they begin to turn a golden brown.
Serve immediately.
