This variation on classic lemonade is meant for easygoing afternoons and evenings in the sun. We start with a traditional lemonade recipe, spice it up a little, and then add a dash of liquor for an edge. Of course, you can easily omit it for a non-alcoholic bevvie.
You'll need the juice of all lemons, and the zest of two for this recipe.
Slice the ginger as thinly as possible.
Add half the water (2 cups) to a pot, along with the ginger slices, lemon juice and zest, and fresh rosemary.
Stir in the maple syrup as you heat the mixture at a medium high setting.
When the syrup is dissolved, cover and lower the heat. Let it simmer for 5 to 7 minutes.
Remove from the heat, and let it cool to room temperature naturally.
Use a strainer to remove the fresh thyme, lemon zest and ginger slices.
Stir in the rest of the water and the bourbon.
Divide between four glasses with ice, topping each with a splash of sparkling water and a lemon slice.

Note: 1) You'll need about 6 medium or 4 large lemons for the amount of juice. 2) You can substitute coconut sugar for the maple syrup if you like. You'll have to stir a little longer until the sugar is dissolved as it heats.
