Creamy Lemon Feta Dip
Next time you have friends over, or you're looking for a new taste sensation on movie night at home, try this rich, creamy dip. Luscious feta cheese gets a charge of lemon and garlic to add zest. Serve it with toasted or grilled slices of baguette or pita bread, and enjoy.
- 1/2 pound feta crumbled
- 1 1/2 tablespoons extra virgin olive oil
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1 garlic clove, crushed
- red chili flakes just a pinch or two
Add feta cheese, 1 tablespoon olive oil, lemon rind and juice, and garlic to a food processor.
Process until smooth.
Spoon into a bowl or serving dish and refrigerate, covered, until ready to serve.
Add remaining 1/2 tablespoon olive oil and sprinkle with paprika just before serving.
