Hi Friends! Welcome back to the blog! Today we are sharing an incredible Cashew Lemon Ginger Granola that is perfect for fall! We love adding granola on top of smoothies bowls, in yogurt or to eat by the handful!

Cashew Lemon Ginger Granola

  • 1 cup rolled oats
  • 1 cup cashews
  • 1/2 cup ground flax seed
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon sea salt
  • 3 tablespoons lemon juice
  • 2 tablespoons honey
  • 2 tablespoons coconut oil


  • Preheat oven to 200 degrees Fahrenheit
  • In a large bowl, add juice from Limoneira lemon, coconut oil, honey, ground ginger, sea salt and ground flax seed
  • Whisk to combine and let sit for 3 minutes
  • Add in granola and cashews and stir to combine
  • Spread granola mixture evenly on a large baking sheet and bake for 20 minutes
  • Stir and bake for an additional 20 minutes
  • Store in sealed container
