Grilled Lemon Salsa

Grilling brings out the rich tangy flavor of lemons, making them the perfect base for a delicious salsa. Add seasonings, and you’ll want to keep some on hand regularly to add flavor to everything from fish or chicken dishes, eggs, burgers and hot dogs, grilled veggies, and much more.

Ingredients
  

  • 2 large whole lemons
  • 2/3 cup olive oil extra-virgin, divided
  • 1/4 cup shallots finely-chopped
  • 2 tablespoons coriander finely-chopped
  • 1/4 cup parsley finely-chopped
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • 1 tablespoon Kosher salt
  • 1/2 teaspoon black pepper freshly ground

Instructions
 

  • Lightly oil the grill, and pre-heat to a medium-high temperature.
  • Scrub the lemons, and then cut them into slices. Pick out any seeds that you find.
  • Take a clean brush, and coat the lemon slices on both sides with about 1 tablespoon of the olive oil.
  • Place the lemon slices on the grill and cook them for about 8 minutes, turning them once. They should be slightly charred, and the rind should be tender.
  • Transfer the slices to a cutting board, and allow them to cool slightly.
  • Chop the lemon slices into about 1/4-inch pieces. Transfer the lemon, including any juice from the cutting board, to a small bowl.
  • Add the remaining olive oil, shallots, seasonings, and parsley.
  • Cover and set aside at room temperature for about 3 hours so that the flavors blend together.
  • Refrigerate in a covered container for up to one week.
  • Transfer the slices to a cutting board, and allow them to cool slightly.
  • Chop the lemon slices into about 1/4-inch pieces. Transfer the lemon, including any juice from the cutting board, to a small bowl.
  • Add the remaining olive oil, shallots, seasonings, and parsley.
  • Cover and set aside at room temperature for about 3 hours so that the flavors blend together.
  • Refrigerate in a covered container for up to one week.

Notes

Note: If you don’t have a grill, you can place them in a baking dish in the oven at 400 degrees Fahrenheit for about 25 minutes.
