Lemon Mint Cinnamon Summer Cocktail
This refreshing cocktail is based on the delicious combination of lemon, fresh mint, and cinnamon. First, you’ll make a simple syrup you can use for other cocktails and non-alcoholic drinks. Then, just add rum and stir.
Lemon mint cinnamon simple syrup
- 1 cup water
- 1 cup sugar
- 1 Limoneira lemon zest & juice
- 1 cinnamon stick
- 1 bunch fresh mint
- 2 ounces rum
- 1/2 ounce lemon mint simple syrup
- 1/2 cup sparkling water
- 1 Limoneira lemon wedge for garnish
- Fresh mint for garnish
Lemon Mint Cinnamon Simple Syrup
Add the water, lemon juice and zest, and sugar to a small saucepan over a medium-high setting. Bring to a bubbling simmer as you stir constantly, until the sugar dissolves.
Add the mint leaves and cinnamon stick, stir into the liquid, and turn off the heat.
Let the mixture steep and cool for about 15 to 20 minutes.
Strain, and chill until ready to use.
Measure the rum and simple syrup into a cocktail shaker with ice, and shake together.
Strain into a glass, top with sparkling water, and garnish with lemon slice and fresh mint.
