Cuisine American

  • 4 cups warm water
  • 1/3 cup coconut sugar
  • 4 Limoneira lemons zest & juice
  • 3 Limoneira oranges zest & juice
  • 8 sprigs fresh mint
  • 2 cups ice cubes

Blender Method

  • Wash the lemons and oranges, and cut them into quarters. Remove the seeds.
  • Place in the blender, along with the coconut sugar and water.
  • Strip the leaves from the mint, and add them to the blender.
  • Blend for 30 to 60 seconds, until the fruit is well broken up, but not yet pureed.
  • Place a cheesecloth over a large bowl, and pour in the contents of the blender. Squeeze the liquid out from the chopped fruit and mint.
  • Pour into a pitcher filled with ice and serve.

Cooked Syrup Method

  • Strip the mint leaves from the stalks, and add to a saucepan with 1 cup of water and the sugar, along with the zest of two lemons and two oranges. (You can save the rest of the zest for another use.)
  • Heat at a medium temperature, stirring until the sugar dissolves. The mint and citrus zest should be fragrant as well as it reaches a boil.
  • Remove from the heat and set the saucepan aside to cool. Once it has reached room temperature, strain out the mint leaves and zest.
  • Add the remaining 3 cups of water to a large pitcher with the ice.
  • Pour in the lemon and orange juice, and stir gently.
  • Continue to stir as you add the citrus and mint syrup from the saucepan.
  • Refrigerate for at least 1 hour before serving.
