YELLOW BELL PEPPER
Bell peppers are loaded with vitamin A and vitamin C. Vitamin A is crucial for eye sight and may even help reduce your risk of certain cancers. Vitamin A also helps in the production of your white blood cells, which helps eliminate harmful bacteria and from your body and fight infections.
Onions are rich in B vitamins, which are essential for your metabolism and nerve function. Onions fight free radicals, which may reduce oxidative stress and cell damage. This is important for preventing chronic disease, such as cancer, heart disease and osteoporosis.
Cilantro is an incredible herb! One of my favorite health benefits of cilantro is that it supports your liver, which is your natural detox organ! It also contains supports gut health, which is essential for digestion and immunity!

- 1 (15-ounce) can chickpeas, drained & rinsed
- 1 Limoneira navel orange
- ½ cup diced yellow pepper
- 3 tablespoons extra virgin olive oil
- 1 tablespoon diced sweet onion
- ½ teaspoon minced garlic
- 1 tablespoon diced fresh cilantro
- Crispy crackers
- 1 avocado
- 1 mango
- Fresh cilantro
- In a medium bowl, add chickpeas, yellow pepper, olive oil, diced onion, garlic, cilantro, orange zest and juice from orange. Stir to combine.
- Let salad marinade in the fridge for 3+ hours.
- Dice mango and avocado. Stir mango into salad. Add a spoonful of salad on each cracker, avocado and fresh cilantro.
