Orange Cranberry Oatmeal Bread

While we love the taste of homemade bread, so many of the recipes we found were time consuming and full of complicated directions. We knew there had to be an easier way to enjoy all our favorite cozy flavors. This is why we created this amazing and simple Orange Cranberry Oatmeal Bread!

All of the ingredients are combined together in a blender and then baked to perfection! This bread is made with whole food ingredients such as oats and orange juice. It is also gluten-free and dairy-free! It can be enjoyed in a variety of ways from breakfast, to snack time to dessert! Enjoy this bread with your favorite spread, such as jam or nut butter.

BREAD HEALTH BENEFITS

 

OATS

Oats are a complex carbohydrate, which help keep you full for longer. They also contain iron! Consuming plant-based sources of iron with vitamin C rich foods, such as the orange in this recipe, will help your body absorb the iron better. Your body needs iron to aid your cells in carrying oxygen throughout the body.

CRANBERRIES

Cranberries contain incredible antioxidants! These may help reduce the risk of chronic disease such as cardiovascular disease and cancer. They are also a great source of vitamin C, which helps form bones and keeps skin healthy!

ORANGES

Oranges are a great source of prebiotic fiber! This is the type of fiber that feeds your good gut microbes and helps them thrive! When those microbes are well nourish, your gut is able to heal itself and digestion runs smoother. Oranges are also a good source of potassium, which is essential for heart function, nerve function and muscle contraction

ORANGE CRANBERRY OATMEAL BREAD
INGREDIENTS
  • 3 cups rolled oats
  • ½ cup coconut sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup fresh squeezed Limoneira orange juice
  • ½ cup non-dairy milk
  • 2 eggs
  • ½ cup dried cranberries
  • 1 tablespoon orange zest
INSTRUCTIONS
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a blender, add oats and blend until a flour consistency forms.
  3. Add in coconut sugar, baking soda, salt, orange juice, milk and eggs. Blend until smooth.
  4. Add in cranberries and orange zest and blend on slow to mix.
  5. Pour mixture into a greased bread loaf pan and bake for 50 minutes.
  6. Let cool, slice and enjoy!
