Rainbow Mint Fruit Salad

Sick of bringing the same ole side dish or dessert to all your summer gatherings? You’ve come to the right spot because today we are sharing how to make this incredible and delicious Rainbow Mint Fruit Salad! This colorful fruit salad not only taste amazing, but is fun and a great way to stay hydrated this summer thanks to all of the water-dense fruits!

While we know you can buy already cut up fruit platters from the grocery store, this recipe is extremely fresh with the perfect light and citrusy dressing drizzled on top! You’re really going to wow your family and friends with this beautiful fruit salad!  

WHY WE LOVE FRUIT

Not only does fruit taste amazing, but it contains some incredible health benefits. First off, fruit is packed with unique prebiotic fiber. Prebiotic fiber is what your “good” gut microbes, also known as probiotics like to eat. This helps your microbes thrive, which in turn helps with gut healing and digestion. 

Fruit also contains phytochemicals, which are compounds produced by plants that have been shown to be protective against oxidative stress. Oxidative stress occurs when there is an imbalance of antioxidants and free radicals (unstable atoms) within the body, which can lead to cell and tissue damage. Consuming a variety of fruit is a great first step in protecting your cells!

RAINBOW MINT FRUIT SALAD
 
INGREDIENTS
  • 2 cups strawberries
  • 3 Limoneira navel oranges
  • 3 kiwi
  • 2 cups blueberries
  • 2 cups purple grapes
GRAPEFRUIT MINT SYRUP
  • ½ Limoneira ruby grapefruit
  • 2 tablespoons maple syrup
  • Fresh mint – 1 tablespoon chopped
INSTRUCTIONS
  1. Cut tops off of strawberries and slice in half.
  2. Peel oranges and slice into 1-inch chunks.
  3. Peel and chop kiwi into 1-inch chunks.
  4. Slice grapes in half.
  5. In a medium bowl, add 3 tablespoons of grapefruit juice, maple syrup and chopped mint. Whisk to combine.
  6. Arrange fruit on a large serving platter by color and then drizzle with desired amount of mint syrup. Enjoy!
