Peel the oranges, and cut away as much of the pith as you can.
Place the orange in a bowl to catch any juice that escapes, and cut into thin slices.
Add the red wine, honey, lemon juice & zest, cardamom, cloves, and cinnamon sticks to a small saucepan over a medium setting.
Bring to a simmer, and cook for about 15 minutes. The mixture should thicken a little.
Add the orange slices and any reserved juice, and simmer for another 2 to 3 minutes, stirring gently.
Remove from the heat, and transfer to a bowl.
Cover with plastic wrap and refrigerate for at least 1 hour to cool.
Before serving, remove the cardamom pods, cloves, and cinnamon sticks.
