Orange Spice Layer Cake With Cream Cheese Frosting

Ingredients
  

Orange Spice Cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups golden sugar
  • 3/4 cup olive oil
  • 1 Limoneira® orange zest & juice
  • 4 large eggs
  • 1 cup yogourt
  • 1/2 cup milk

Orange Cream Cheese Frosting

  • 4 ounces vegan cream cheese
  • 3 tablespoons vegan butter room temperature
  • 1 tablespoon Limoneira® orange juice freshly squeezed
  • 2 teaspoons Limoneira® orange zest
  • 2 1/2 powdered sugar

Instructions
 

Orange Spice Cake

  • Preheat oven to 350 °F, and prepare three 9-inch round cake pans by lining with waxed paper, then buttering and flouring the pans.
  • Add the flour, salt, baking soda, baking powder and spices to a large bowl and stir together to lend well.
  • In a second bowl, beat the butter and sugar together until light and fluffy in texture. Add the orange peel and blend.
  • Add the eggs one at a time as you continue to blend.
  • In a third bowl, beat the yogourt and milk together.
  • Add one third of the egg mixture to the flour mixture.
  • Next, add one third of the milk/yogourt.
  • Repeat until all the ingredients are well blended.
  • Divide the batter between the three pans, and bake in the oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool completely on a rack before frosting.

Orange Cream Cheese Frosting

  • Blend the cream cheese and butter together in a medium bowl.
  • Add the orange juice and zest, and beat well.
  • Blend into the powdered sugar until the mixture is smooth and spreadable.
  • Place one cake on a platter, and spread with about 2/3 cup of frosting. Repeat with the second layer.
  • Top with the third layer, and spread the remaining icing over the sides and top of the cake.
  • Can be stored in a covered container at room temperature.
