Vegan Chocolate Orange Pudding

Smooth, creamy chocolate pudding is a perennial favorite – a comfort food of desserts. We’ve updated our recipe to make it a vegan dish, adding tangy Limoneira® orange for a delicious contrast. It’s quick, easy, and sure to be a favorite whether its just for you, or part of a dinner party for guests.

Ingredients
  

  • 2 large ripe Limoneira® avocados
  • 1/3 cup maple syrup
  • 1/3 cup chocolate chips melted
  • 1 teaspoon vanilla extract
  • 1 Limoneira® orange zest & juice
  • 1/2 teaspoon chia powder
  • 2 Limoneira® oranges peel only (optional)

Instructions
 

  • Cut the avocados in half, and scoop out the flesh. Use a food processor or blender to process it until smooth.
  • Melt the chocolate chips in a double boiler. You can create one by placing a heatproof bowl inside a pot that’s half full of water. Heat gently until just melted.
  • Stir the maple syrup, vanilla extract, and melted chocolate chips into the avocado puree.
  • Add the orange juice and zest, and chia powder, stirring until well blended.
  • At this point, you can divide the pudding between four cups and refrigerate.
  • If you’d like to eat the pudding inside orange cups, take two large oranges, and cut them in half. Carefully, with a very sharp fruit knife, cut into the orange to remove only the flesh and membrane, leaving the pith and outer peel as cups for the pudding.
  • Refrigerate for one hour before serving.
